Pollo e salvia – Chicken and Sage

– – – – – – – – – In italiano

Chicken and sage are old friends.
Sage, usually pared with onion in a stuffing or a sauce, bolsters the savory quality of chicken.
Goose stuffed with sage and onion and served with applesauce was the classic Christmas dish in the UK from the reign of Elizabeth to the Second World War. So we can say sage it’s a good friend of all kind of poultry.
